Eggplant Raita

1 large Eggplant

1 small onion (or half a medium), diced
1 tomato, diced
1/2 cup yogurt
coriander, chopped finely
chaat masala
black salt
3-4 green chillies, chopped finely
cumin powder

Method:
1. Roast whole eggplant on stovetop or wrapped in gladwrap in the microwave.
2. When cool, remove the skin and mash coarsely.
3. Add remaining ingredients and spices to taste. Chill.
